Since it is snow goose season, and I plan on harvesting a few tomorrow, I thought I'd share an awesome snow goose recipe. I got this recipe from the wife of one of my hunting buddies. This recipe involves brining the snow goose breast (anykind of waterfowl will work) and roasting all day in a crock pot, so make sure you have enough time to do each step.....
Brine Ingredients:
1/2 Gallon of Water
1/2 Cup Salt
1 Cup Brown Sugar
1 Tbl Black Peppercorns
1 Tbl Dried Rosemary
1 Tsp Red Pepper Flakes
Roast Ingredients:
4-6 Goose Breasts
1 Onion Roughly Chopped
4 Slices of Bacon
1 Apple Roughly Chopped
1/4 Cup of Orange Juice
Prepare the brine by combining all ingredients in a pot and bringing to a boil. Cool the brine in the fridge. Once cool, submerge goose breasts in the brine and refrigerate for at least 12 hours, 24 preferebly. When you are ready to cook, rinse the goose breasts and dry. Add the goose breasts to the crock pot and add cover with the rest of the ingredients. Cook for 6-8 hours or until tender (the goose should pull apart easily). Serve with mashed potatoes or whatever you like and enjoy!
