Venison Enchilada Casserole

Tried something new tonight. 

Browned a pound of ground venison with half an onion and one poblano pepper. Sautéed these in olive oil, salt, cayenne pepper and garlic powder. 



In casserole dish I put a layer of enchilada sauce (old El Paso brand) then a layer of shredded cheese then a layer of crunched up Doritos. On top of that I put a layer of the ground venison mixture then more cheese and sauce. 


I repeated this making two layers of meat and Doritos. Finishing with a layer of Doritos, shredded cheese and enchilada sauce on top. Popped it in the oven at 350 for 30 minutes and it was ready to eat. Tastes great! I'll have to make this again.
